It's sandwiched with layers of rich banana sponge with piped maple buttercream and finished with candied pecans for a showstopper twist on everyone's favourite banana bread..

This is a rare example of a bake that improves, given a day or two to ‘mature’. Make the sponges a day or two ahead, then wrap and store in the fridge until you’re ready to assemble the cake.

Potato salads don't get much more gorgeous than this. Saline-sweet mussels, sharp capers and a kick of chilli lend bags of flavour to the potatoes.⁠

Be sure to use waxy salad potatoes rather than floury ones for this dish, as they’ll retain their texture and absorb the dressing without falling apart. You can use ready-cooked mussels for this dish too – you need about 150g mussel meat.⁠
